Ingredients
  • 500 g Kings PrawnsI've found Sainsbury's Taste the difference range or Waitrose own brand are one of the very best
  • 1 Bipins Marchi Masala fresh herb and spicefrom www.curryfusion.net). Alternatively use surti masala or sheek masala for a different flavour profile.
  • 100 ml Coconut milk
  • 1 sliced green bell pepper
  • 1 tbsp chopped coriander

Gujarati Prawn Coconut Curry An easy to make professionally cooked Gujarati prawn curry, in less than 10 minutes. Amazingly delicious and easy to make. its quicker than the take-a-away and a healthy little number. COOKING PROCEDURE Gently fry the machi masala with the sliced peppers in 1 tbsp of sun flower oil under low heat for 3 minutes to release the flavours and aroma. Drop in the prawns and cook for 5 minutes until pink and fold in the coconut milk, cook for further 3 minutes. Garnish with coriander and serve with basmati.
