Indian Spice Crust Halloumi & Mongetout
Spice crust halloumi appetizer. Inspired by all fresh ingredients and the unique brilliance of halloumi a cookable semi-hard cheese combined with the sweet crunch of mongetout. Simply marinated in authentic surti masala curry paste and grilled to a crunchy finish and served on a bed of jeera masala sautéed mongetout. Slice the halloumi and apply half a tsp of surti masala to one side and grill or cook on hot griddle or cook in a hot frying pan for 1 minute on each side untill crispy but avoid burning the delicate spices. Sautée the mongetout in a 2 tsp of light olive oil with 2 tsp of jeera masala. Garnish with a drop of lemon juice and roughly chopped coriander.
