Delicious Luxury Coconut Sesame Aloo Special
A authentic lightly spiced potato dish inspired by our classic Gujarati aloo. Flavour and texture accentuated by freshly grated coconut and toasted sesame in traditional tarka.
The fresh coconut and sesame adds a new tropical dimension to the enjoyment of the flavour and texture profiles. Its truly awesome, give it a go and if you don't have all the ingredients I can send you a little kit of the exact amount of fresh spices. Enjoy.
1. In a heavy frying pan add to the hot oil the mustard seeds and the fenugreek, fry for 40 seconds then add asfotida, sesame, peanuts potatoes and gently fold together.
2. Add the turmeric, ground coriander and the salt. Cover with a good fiting lid and cook under low heat for 20mins.
3. Finish off with the sprinkling of coconut and freshly chopped coriander.
Serve with chapatti and onion rhita or as a side dish to complement chickpea or mutter pannier or the infamous lamb raan.
