The classic omelette with a kick
  • 2 very large eggsOrganic, free range
  • 2 pinches cayenne pepper
  • 2 pinches tumerick
  • salt and pepper
  • 1 tablespoon Coconut Oil

Take 2 very large free range or organic eggs and lightly beat. Add 2 pinches or shakes of cayenne pepper and 2 pinches or shakes of tumerick Add some salt and pepper to taste and beat together again. Heat 1 tablespoon of coconut oil in a large frying pan and once the coconut oil has melted add the egg mixture. Now at this point I like to turn down the heat and add a lid for 5 minutes or until the omelette has cooked through. I find that this makes the omelette lovely and fluffy rather than rubbery. Serve with your favourite Salad or Kicking greens with a crunch over on my Sides and Snacks page.
