Take 2 very large free range or organic eggs and lightly beat.
Add 2 pinches or shakes of cayenne pepper and 2 pinches or shakes of tumerick
Add some salt and pepper to taste and beat together again.
Heat 1 tablespoon of coconut oil in a large frying pan and once the coconut oil has melted add the egg mixture.
Now at this point I like to turn down the heat and add a lid for 5 minutes or until the omelette has cooked through. I find that this makes the omelette lovely and fluffy rather than rubbery.
