  • 1 kg ripe tomatoes
  • 3 leeks
  • 1 large onion
  • 2 Garlic cloves
  • 1 liter vegetable stock
  • 5 tablespoons of tomato paste
  • 2 tablespoons Dried Marjoram
  • sour cream (optional)
  • salt and pepper
  • Olive oil

chop up the onion and garlic add some olive oil into a pot and heat up add the onion garlic and let it sweat a bit chop up the leeks and add to the pot stir and sizzle for 5 minutes chop up the tomatoes and add to the pot let it come to a boil add the vegetable stock and marjoram, let it come to aboil once again reduce heat and simmer with the lid on top for about 30 minutes take off the heat and blend with a hand blender then sieve with a mesh strainer or colander put it back into the pot and reheat if necessary season with salt and pepper serve with a splash of sour cream
