Mix cream cheese and lemon juice.
Add condensed milk and vanilla.
Mix until creamy.
Refrigerate (overnight is best, but a few hours will do). This isn't absolutely necessary, but the cheesecake is a little too creamy if you don't.
Spoon cheesecake into brandy snap cases.
Cut strawberries into thin slices. Mix in a bowl with the sugar until sugar dissolves.
Evenly cover the cheesecakes with your sugary/syrupy strawberries!
Note: I used brandy snap cases, as they were easily available in the UK. If you can find graham cracker crusts, or want to make your own, I prefer the taste of them.
