Mini Creamy Minstrel Cheesecakes

Ingredients
  • 1/3 cup lemon juice
  • 8 oz Cream Cheese
  • 14 oz Sweetened Condensed Milk(I normally use Carnation)
  • 1 tsp Vanilla Extract(Sometimes I add a little more. I like vanilla..)
  • 1 bag Minstrels
  • 6 Brandy Snap Cases(Traditionally these are served in graham cracker crusts)
  • 3 Flakes (Chocolate bars)

Mix cream cheese and lemon juice. Add condensed milk and vanilla. Mix until creamy. Refrigerate (overnight is best, but a few hours will do). This isn't absolutely necessary, but the cheesecake is a little too creamy if you don't. Spoon cheesecake into brandy snap cases. Crush your Flakes. Evenly cover the cheesecakes with crushed Flakes and Minstrels. Note: I used brandy snap cases, as they were easily available in the UK. If you can find graham cracker crusts, or want to make your own, I prefer the taste of them.
