Baked Turkey Meatballs

Ingredients
  • 500 g turkey mince (I like thigh mince as it's juicier, and cheaper!)
  • 1 onion
  • 2 cloves garlic
  • 1 Carrot
  • 2 tsp dried oregano
  • Sea salt and ground black pepper to taste
  • Drizzle of olive oil
  • 2 tins chopped tomatoes
  • Grated cheese (preferably organic)

Preheat oven to 180C/350F/Gas mark 4 Place the onion, garlic, carrot, oregano, salt and pepper in a food processor and blitz Add this to the turkey mince in a large bowl Prepare to get your hands dirty Squish it all together and roll into balls and place in a cast-iron baking dish (if you have one) Drizzle with olive oil and bake the meatballs in the oven for 20 minutes Remove from oven and cover with chopped tomatoes and grated cheese Bake for another 20 minutes Enjoy with brown rice or quinoa as an alternative to pasta
